Because it's easier to assume the character isn't the way you want him/her to be, and to blame that on the writers, than to accept that a character isn't exactly what you want?
Maybe it's a side-effect of the sense of entitlement that our society seems to have developed over the last few, well, decades, I guess.
It makes no sense on a lot of levels, getting that emotionally wrapped up in fictional characters (of course, that can definitely be taken with a rather large grain of salt, coming from someone who obssesses over a tv show to the point she writes fic). O_o
